Kitchen Manager- CitiBank- Jacksonville FL.

7am - 230pm

MAJOR FUNCTIONS/RESPONSIBILITIES:

Oversee entire kitchen operation as well as the kitchen staff. Oversee and assist in preparing nutritionally balanced, attractive family-style meals for Bright Horizons children and staff. Plan menus taking into account the center budget, the foods in season, local availability and state and federal nutritional requirements for children. Incorporate Bright Horizons' missions, culture, goals, values (HEART Principles,) philosophies, policies and development of an inclusive environment. Keep an accurate inventory of supplies and order replacement of supplies as needed. Child care has special demands in that we care for children who in many instances, cannot care for themselves. It is critical that the Cook Supervisor be mentally and physically fit to perform the duties outlined in this job description.

** Our competitive wage pays $18.26 per hour.

Supervision and Leadership:

  • Supervise kitchen staff assigning appropriate responsibilities and provide follow up as appropriate.

  • Assist in the interviewing process when hiring additional kitchen support.

  • Provide initial and ongoing training to kitchen staff.

  • Facilitate regular (monthly or bi-monthly) meetings with kitchen staff.

  • Communicate all food service related issues with kitchen staff.

  • Assist in the evaluation and coaching process of kitchen staff in collaboration with Assistant Director and/or Director as requested.

  • Manage labor and other expenses to stay within budget.

  • Meet with Director and/or Administrative Team monthly to review budget, menus and general kitchen operation as well as learning about any nutritional or special dietary needs for new or existing children enrolled in the program.

  • Meet with new families to the center/school to learn of the of nutritional and/or special dietary needs of the child(ren) enrolling at the center/school, and as needed as child(ren) dietary needs change.

  • Establish and maintain working relationships with vendors, working closely with the food supplier (representative) on a weekly and/or ongoing basis. Obtain quotes - and aid in the negotiation ofpricing with vendors with authority and within the parameters established by the Director.

Planning, Preparation, and Maintenance of Equipment
  • Is knowledgeable of state nutritional requirements of children.

  • Is familiar with state health inspection guidelines and maintain compliance of regulations informing center Director of needs and /or changes.

  • Forecast expenses and how they impact the operation budget in order to establish a cost efficient/nutritious food program.

  • Plan, post and follow approved menus that are nutritionally sound, making substitutions as needed, keep accurate inventory records and place food order, all within center food budget.

  • Reduce/eliminate unnecessary purchases and waste by effective planning and preparation.

  • Ensure food is served in amounts that are based on the number of children and staff eating that day.

  • Ensure food is served at appropriate temperatures and in appropriate serving containers, i.e., not sending cans and/or large hot pans into the classroom. Periodically test food to ensure they are served at appropriate temperatures.

  • Maintain effective, safe storage for food, cooking and serving supplies, equipment and utensils, and cleaning supplies in accordance with the state and/or local regulation.

  • Keep the refrigerator, stove and hood, can opener and other appliances clean and in good working order.

  • Clean the kitchen counters and shelves, (spills on floors as needed).

  • Lift and carry bulk food appropriately when delivered and store food on shelves above and below counter level in accordance with safety guidelines. May involve use of a foot stool. Physical Demand: 10 to 40 lbs.

  • Keep accurate meal and snack count records as required per region guidelines.

  • Have complete knowledge of kitchen activities and perform 'Cook' responsibilities on a daily basis in addition to the responsibilities of the Cook Supervisor.

Safety and Sanitary Procedures
  • Follow all Bright Horizons and local regulatory health, safety and hygiene procedures including but not limited to lifting, carrying (pan, dishes, cans), hand washing, etc.

  • Empty and clean trash and garbage cans. Physical demand 10-40 lbs.

  • Wash and sanitize dishes and cookware using the Sanitizer machine or local sanitizing methods as determined by local Health Department.

  • Understand emergency procedures and what to do in cases including but not limited to: fire, tornado, hurricane, and chemical leak, CPR/First Aid when necessary; including lifting and carrying injured children.

  • Observe staff in their daily tasks providing coaching, feedback, modeling and training on ways to safely perform their duties.

  • Responsible for overall cleanliness of the kitchen and to ensure the kitchen meets licensing regulations and health requirements.

ADDITIONAL RESPONSIBILITIES
  • Attend food service training required by the state.

  • Maintain positive and supportive business, licensing and regulatory relationships.

  • Work in harmony with other center staff and show enthusiasm toward the job. Handle routine situations with good judgment, flexibility, and good humor.

  • Participate in and cooperate with group decisions; is a team player.

  • Establish and maintain a friendly, supportive rapport with the parents/guardians.

  • Provide ongoing positive customer service to all parents/guardians at all times.

  • See situations from the children's point of view and share the enjoyment of humorous situations.

  • Encourage children to seek assistance and show trust and confidence in them.

  • Meet all requirements for van driving responsibilities if applicable.

  • Responsible for the food shopping as needed.

  • Other duties as assigned

PHYSICAL DEMANDS
  • Will frequently lift or move average weight as in lifting, carrying, and holding children and infants (10 to 40 lbs.)

  • Will occasionally move or lift average weight (10 to 40 lbs.) in awkward or difficult position.

  • Will rarely lift heavy weights (over 40 lbs.), normally only in emergency situations. (Some children, equipment, or supplies may weigh more than 40 lbs.)

  • May be required to stand up for 95% of the day.

  • Must be able to interact with children on the playground or in a classroom, i.e., run, jump, etc.

  • Must be able to physically and mentally react immediately to unexpected circumstances.

  • Seek assistance to perform physical demands of the job if necessary, i.e., lifting or moving heavy weights.

  • Must be able to stoop and bend to interact on child's level.

EDUCATION/EXPERIENCE
  • Must be 18 years old (21 years if responsible for driving a van).

  • High School diploma/GED required.

  • Has relevant experience in a licensed child care facility kitchen, commercial kitchen, public school cafeteria, or equivalent.

  • May be required to have food service/food handlers permit or license according to state/local regulations.

  • Must meet state requirements for Cook and additional center/school requirements may apply.

  • Serve Safe-Culinary Preferred

Compensation Range: $ 18.26 / HR
